Fez has the best-preserved old city in the Arab world, the sprawling, labyrinthine medina of Fes el-Bali, which is incidentally also the world’s largest car-free urban zone. Within the medina transports of goods is provided by donkeys, mules and handcarts.
Fez, spiritual capital of Morocco, is also the birthplace to the most refined and diverse cuisine. Lift the lid of an earthenware tajine and get under the surface of this fascinating country by plunging into the souks with our chef as a guide and tasting simple delicacies that are on our doorstep.
